While I may not love pinterest (short story: you pin things, but don’t do them – and it focuses on what you don’t have instead of what you do) I do really like my wishlist board. It may sound like I’m contradicting myself, but I don’t think so. I pin what my eye is drawn to, and what I love. That way, if I happen to be out and see a similar style at a lower price point, I will know that I really want it and its not an impulse purchase. Also – if I happen to have some extra money on hand – I know exactly how I’d like to spend it.

I haven’t posted a recipe in a while, but the muffins I made last weekend are just too good to keep to myself.  They’re the best muffins I’ve ever made, or had for that matter. And they happen to be vegan. Even better!
Banana Chocolate Chip Muffins
(makes approximately 12)
2 cups unbleached all-purpose flour
1-1/2 tsp baking soda
1/2 tsp salt
1 c granulated sugar
1/3 c vegetable oil
4 very ripe bananas, mashed
1/4 c water
1 tsp vanilla extract
cinnamon, to taste
1 c non dairy semi-sweet chocolate chips

Preheat oven to 350 degrees Fahrenheit. Lightly grease your muffin tins. Use vegan butter if you want to keep the entire recipe vegan.

In a medium bowl, mix together the flour, salt and baking soda. Add a dash or two of cinnamon.

In a large bowl, mix the sugar and the oil. Add in the mashed bananas and chocolate chips. Stir in the water and vanilla until just incorporated.

Add flour mixture, a little at a time and stir until mixed. Add additional cinnamon, to taste.

Fill all muffin cups evenly and bake for 25- 30 minutes, until they are golden brown.

Try not to eat them all at once : )

Happy Friday Friends. After a very busy week, I’m beyond thrilled to have a very special visitor this weekend, and lots of fun planned! I’m going to one of my favorite foodie events of the year, and seeing Jersey Boys for the first time! I am super excited.

Hi friends! I’m baaack! Hope you had a great week. We had a lovely time down in Key West. The vibe is very relaxed, and anything goes. And Miami was just great. I liked it much more than I thought I would! I would love to go back soon! And the trip was a great learning experience all around. Hard to leave, but I was very ready to be back in the city!

Spent the day at the beach the first day, and had all of my essentials with me – a good book, hat, camera and frozen drinks!
Also made some time to see the sights. We had the best key lime pie EVER, and I stocked up on custom sandals from this awesome store down there.
Me and the bf spent the afternoon at another gorgeous beach, and had some insanely good seafood. Seriously, the best ever. If you’re planning a trip, I’d be happy to give you the name!
After the week on the laid back islands, it was time to head to Miami for a bit more sun and a night out. It was awesome all around.
Can you believe that its almost V-Day? I’ve always liked Valentine’s Day, it doesn’t matter if I’m making fondue with all of my girlfriends or out to dinner with the bf. Whats not to love about a holiday that revolves around the color pink and chocolate?

I was telling a friend this weekend that I can’t wait to bake – but get so overwhelmed with all of the choices and ideas out there. So, I spent some time and cultivated a list of ideas that look awesome to me. I have four – yes four – holiday parties this week, so baking will be very much needed to relax this weekend.
Whiskey, Carmel, Marshmallow and Bacon Bark – via endless simmer

Hi friends. Hope you had a great weekend! I had an awesome time in Nashville – seriously, I would move there tomorrow! So many fun restaurants and stores, and everyone is SO nice! Here are some tidbits from my southern weekend:

I am thankful for my apartment and more importantly the people who come in it – my family and friends, and my love. I’m spending the day – and weekend – with family and I’m wishing you and yours a wonderful holiday. I hope you take a true, quiet, reflective moment today to think about all you have to be thankful for.
